Maple Glazed, Pepper Crusted Salmon

  • ¾ cup Maple Syrup
  • ¼ cup Soy Sauce
  • 4 (6 oz) salmon fillets
  • ¼ cup coarsely ground black pepper


Mix maple & soy thoroughly in a large air & liquid tight bag. Add the fillets to the bag and marinate in refrigerator for a minimum of 4 hours or 24 hours is even better. Remove from marinade, place on your baking dish or broiler pan which you have sprayed with oil and divide the pepper up among the tops of the fillets. Do NOT add the pepper until you are ready to cook. Cook to your liking – being careful NOT to overcook. The flesh will turn a pale pink throughout when done. The Syrup may cause some smoking -- don’t be alarmed!
