Jed's Sweet & Sour Chicken

Ingredients
4 boneless skinless chicken breasts - cut into small bite size pieces
1 red pepper - cut into bite size pieces
1 orange pepper - cut into bite size pieces
1 medium size onion - cubed
1 small tin pineapple chunks - juice reserved
1 small tin water chestnuts, drained
handful of cashews (if desired)
1 bottle of Jed's Sweet & Sour dressing
Brown rice

Directions

  1. Put water on to boil for rice. Meanwhile:
  2. Spray bottom of wok or large frying pan with cooking spray
  3. Add peppers and onions - cook until soft
  4. Add chicken - cook till no longer pink
  5. Add enough pineapple juice to cover bottom of pan
  6. Add pineapple and chashews (if desired) stirring gently
  7. Add water chestnuts and continue stirring
  8. Shake bottle of Jed's Sweet & Sour dressing and pour over mixture in pan
  9. Stir until heated through
  10. Serve over bed of brown rice and enjoy!
