Maple Salmon in Orange Sauce

6 salmon Filets
1 cup of fish broth or chicken broth
1/2 onion finely chopped
2 cups of Orange juice or juice from 6 oranges
1 cup evaporated milk (cut in half with water)
1/4 cup Jed’s Pure VT Maple Syrup
Salt and pepper

In a large pan, sauté the onion in a small amount of olive oil, add the orange juice and cook until it’s reduced in half. Add the evaporated milk and reduce a little more, then add the maple syrup. While sauce is reducing – place the salmon filets in broth and bring to a boil. Then place salmon in 350 degree oven for 15 minutes. Remove salmon from the pan and pour orange sauce over the salmon.
